Pumpkin protein breakfast cake

Looks like a random grab-bag from my pantry, doesn't it? But in less than three minutes, this hodgepodge of ingredients (minus the pineapple...) yields a warm, sweet (but not too sweet), comforting breakfast that just may be good enough to stick a candle in and sing "Happy Birthday" around. 

It's called pumpkin protein breakfast cake, the idea for which comes from Cara's Cravings. This sure hit the spot when I wanted something other than Kashi cereal or yet another bowl of steel-cut oats in the morning. You can find Cara's recipe here; I didn't make any changes to it other than using Stevia instead of a packet of Truvia. My cake turned out looking almost identical to hers, right down to the green bowl, so I didn't take a finished-product photo. Try this next time you're scavenging for a breakfast that's just a little bit out of the ordinary. Thanks, Cara!
